Food and Beverage - Director
Responsibilities
- Actively promotes an environment conducive to high-quality customer service and employee relations by being a positive leadership example
- Provides overall direction, coordination, and ongoing evaluation of operations
- Responsible for scheduling and payroll for the food and beverage department
- Budgetary, projection and cost control skills to be applied to the daily operations of the food and beverage department
- Responsible for all departmental hiring, training, evaluations and diplomacy actions
- Works with marketing and advertising to promote Eagle River Casino & Travel Plaza’s food and beverage outlets
- Acquire and maintain relationships (e.g. associates, customers, vendors)
- Creates, manages and implements departmental policies and procedures
- Ensures maintenance of safety and sanitation standards and policies
- Ensures staff are ASIP certified
- Responsible for profit and loss for food and beverage
- Leads front of the house and kitchen team
- Must be able to multitask in a fast-paced environment and meet deadlines
- Understands security requirements
Qualifications
- 10+ years experience in the food and beverage industry
- Minimum 3 years senior food and beverage management experience (preferably handling multiple outlets and diverse concepts)
- Food and beverage front of the house management experience with demonstrated knowledge
- Extensive knowledge of restaurant, bar/lounge and kitchen operational procedures
- Knowledge of menu composition, food preparation and basic food handling and sanitation standards
- Culinary experience preferred
- Knowledge of liquor control procedures
- Experience in a casino setting a definite asset
- Training in management and employee development preferred but not required
- Continuous training and education to keep abreast of changes in the industry and external environment
- University or college degree preferred
- Excellent written and oral communication skills
- Ability to meet deadlines in a rapidly changing business environment
- Developed writing skills sufficient to prepare written materials involving detailed descriptions and explanations requiring the accurate use of specialized terminology
- Self-planning skills sufficient to schedule, organize and carry out work assignments according to established work plans
- Adjusting work schedules according to changing priorities
- Developed judgment and problem-solving skills sufficient to interpret and/or analyze factual and conceptual information with the ability to adapt general procedures or approaches when formulating responses to problems
- Manages workload independently and works well in teams
- Develops security and systems knowledge through on-the-job experience
- Must display leadership skills, the ability to multitask and adjust to multiple jurisdictions
- Working knowledge of Microsoft Word, Excel and PowerPoint
- Ability to use standard software applications including point of sale systems
- The schedule for this position may vary and would require the ability to work shift work, late nights, weekends and holidays
